Safeguarding of culinary heritage promoted in Cuba
In the framework of the 4th Convention of the Federation of Culinary Associations of Cuba held on 17-18 October, the UNESCO Regional Office for Culture in Latin America and the Caribbean was invited to make a special presentation on the occasion of Cuban Cuisine Day concerning the 2003 Convention for the Safeguarding of the Intangible Cultural Heritage.
Consultant Gilda Betancourt Roa, representing the Regional Office, spoke of the need to safeguard the culinary heritage of the countries in the region, particularly in the case of Cuba, highlighting UNESCO's approach to this theme.
In her presentation, the specialist referred to the case of ancestral and traditional cuisine in the Mexican state of Michoacán, which led to a fruitful exchange among chefs from different regions in the country, where they explained the work they have been doing to rescue Cuba's traditional cuisine.
