Chuño is one of the most important legacies of Andean civilization. As a result of the dehydration process of the potato, chuño requires the most extreme climatic conditions to become the storable food of high nutritional value that it is.
The validity of this food tradition is evident in the Puno highlands, where many families from communities near Lake Titicaca move to the coldest areas during the time of frost to transform their potato crops into this precious product that for centuries has maintained the food security of the Andean population of the country.
